Nutty Ginger Seitan

Last week I made Ginger Seitan from the How it all Vegan! cookbook. It was good, but maybe a little too salty (thanks to my fiddling with the recipe, I'm sure!) It made enough for two adults and hubby wasn't home, so I had a bunch of left overs. Yesterday for lunch, I decided to see what I could do with it. I rinsed off the ginger sauce, added peanut butter and apple juice and heated it in the microwave. Oh my goodness! It was WONDERFUL! The ginger and peanut went so well together and it wasn't too salty this way. I ate it with carrot sticks because I'm cool like that (read lazy).
