McDougall Day 6

Yesterday was a difficult day for me. There are a lot of things going on in my little world right now and I wasn't in the mood for cooking, so my wonderful husband took me out to eat! We went to Panera Bread and I got the classic salad with fresh bread. It was heavenly and not part of the McDougall plan, but I didn't really care. I was fully expecting to have not lost any weight, but when I weighed myself this morning I was down another pound! That's 6 down ~19 to go! I'm feeling much more confident with the plan and I look forward to creating meals that are diverse and tasty. Day 5

I think I might be in love with the McDougall plan! This morning when I weighed myself, I'd lost 5 pounds! That's exciting! AND, the food has been wonderful!
For breakfast yesterday morning I had a whole wheat tortilla with honey. I know, I know, honey isn't vegan. I'm horrible, but I couldn't find agave nectar for cheap enough, so honey it is. For lunch I had a burrito made with an Ezekiel 4:9 tortilla with black beans, corn, salsa, romaine lettuce and spinach with a glass of delicious, fresh apple, spinach, carrot juice. And for dinner I had cheezy risotto with corn and broccoli. It was very yummy (although I added too much onion). Here's the
recipe for the risotto. I just steamed the broccoli and had frozen corn that I popped in the microwave. Hubby liked it too, but munchkin wouldn't eat it. She doesn't like anything cheezy though so she had a non-vegan dinner.

Everything has been tasty, although I must admit I'm craving chocolate. I've found a few recipes, I'm going to try one this weekend I think. I'll post anything if I find something wonderful! :)

Day 3

Today is day 3 on the McDougall plan and I've lost 2 pounds! I haven't been hungry and I'm learning new things quickly. Last night I made potatoes that were amazing! I didn't make enough of them, but they were delish!!

Potato slices:
Preheat the oven to 350 Degrees (you might be able to do it higher?)
Wash and slice red potatoes
Line a cookie sheet w/parchment paper

Place one layer of potatoes on the cookie sheet, sprinkle on your favorite seasoning (I used garlic and herb Mrs. Dash)
Bake 15-20 mins, flip over, season the other side and bake an additional 15-20 mins.

If you slice them really thin and let them brown, they're perfect, but they're still amazing even if they're not browned.

I'm having a little trouble finding new things to eat. I'm still figuring it out and I'll post any wonderful recipes I create! :)

McDougall Plan

I just realized how long it has been since I blogged last! That's crazy. Feb. and March have been fun and kind of busy for me. Munchkin and I took my grandma to Florida and spent 2 weeks with her! It was a TON of fun and I even introduced my very meat eating grandma to some great vegan food! (She really enjoyed the seitan and the bean burritos I made) So I apologize for the huge lack of blogginess. :) I'll try to be better.

While I was in Florida I had a chance to put on a bathing suit (twice in the 13 days we were there) and I realized that it was frightening how fat I've gotten!! I stepped on a scale for the first time in months and the number I saw shocked me into action. I am 8 pounds lighter than my heaviest (which happened after I quit smoking while I was planning my wedding). I'm still not comfortable enough with my weight to be posting it on the web, but let's just say I'm officially "over weight" (by at least 20 pounds) and I want to lose 25-30. So, I have decided to follow the McDougall plan for Maximum weight loss. McDougall advocates a whole food plant based diet, so it's vegan and it's logically healthy. The focus is on whole starches (whole grains and starchy vegetables) with 1/2-1/3 of each meal coming from yellow and green veggies. Also included is 2-3 servings of fruit a day. There are some things that aren't permitted, such as oil, soy products and "fatty" proteins, like nuts. I'll post recipes that I create that are yummy and I might even share things to avoid.
