Maybe I'm the only one that this happens to, but this has been a week of food failures. I've tried 2 new recipes (that I created) and they were both really bad. I tried to make sloppy Joe from TVP and it turned out really gross. I've actually made this before and it was good, but something about it this time didn't work. Then last night I tried to make a Spanish rice casserole and it was dry and nasty. I think I'll try the Spanish rice casserole again with some minor changes and it will be good it's just frustrating. I think next week I'll stick with things that are "regulars" in our house.
What do you do when you have a food failure?

Bad Blogger Update
I've been a bad blogger. I can't believe it's been 6 months since my last post! A lot has happened in that six months. I am now a pregnant vegan momma. We go today for our 20 week ultrasound. I'm excited, and more than a little nervous. (The nerves have NOTHING to do with being vegan and EVERYTHING to do with being Linz). I am still working on getting hubby and munchkin to eat more vegan food, but my focus has become more about getting them to eat healthier well balanced meals in general (vegan or not). Trying to convince hubby that angel hair pasta with butter isn't a full meal is difficult, but I think I'm making some progress! :-) We also found gardein crispy tenders that everyone in the family will eat (and enjoy) although we eat more than one bag at a time which makes it pretty expensive.
Ok, so I'll give you a "recipe" and a link to a free ebook.
The Ebook isn't entirely vegan, but there are some recipes that look really good and veganizing things is always kind of a fun challenge!
Peanut Butter Banana Smoothie.
Munchkin said, "It's the best smoothie I ever had!" over and over again.
1 frozen banana
1 TBSP peanut butter
1/2 cup unsweetened almond milk
1/4 tsp vanilla extract (I forgot this and it was still good)
Blend and drink!
OK, so I didn't measure anything and I didn't have frozen bananas so I just added some ice.
